Air Flow Systems for Mauting Chambers

Overview
Mauting offers a range of advanced airflow systems to improve drying uniformity, processing efficiency, and product consistency within fermentation, ripening, and chilling chambers. These systems control the direction and dynamics of airflow through the chamber�either through conventional circulation or innovative alternating flow technology. Each system is designed to suit different chamber sizes, trolley configurations, and product types.
Alternating Air Flow Systems
These systems regularly reverse the airflow from top-to-bottom and bottom-to-top. This helps avoid surface over-drying, improves moisture removal, and ensures the most uniform treatment of all products inside the chamber.
DAF1 � Dual Air Flow System 1
- Vertical phase: Air enters through vertically positioned nozzles and is extracted above the trolleys.
- Horizontal phase: Air enters from above and is also extracted above the trolleys.
- Best suited for: KMD chambers up to 6 trolleys.
DAF2 � Dual Air Flow System 2
- Vertical phase: Air enters vertically and exits above the trolleys.
- Horizontal phase: Air enters from above and exits through ducts at the chamber base.
- Best suited for: KMZ or KMU chambers up to 4 trolleys; KMD chambers up to 6 trolleys; carts over 2?m.
CrossFlow System
- Top-down phase: Air flows from ceiling ducts to side-wall extraction.
- Bottom-up phase: Air flows from wall ducts below and exits above the trolleys.
- Best suited for: Large KMD chambers with widths up to 7 trolleys and tall products over 2?m.
Classic Air Flow Systems
These conventional systems offer simpler airflow dynamics, suited to products with lower average dehumidification (typically < 1% / 24h).
Classic System
- Vertical air supply through side wall ducts; extracted above the trolleys.
- Recommended for: KMZ, KMD, and KMR chambers.
Central System
- Airflow distributed through a 3-chamber duct above the trolleys (central extraction, side supply).
- Recommended for: KMD and KMR chambers in atypical or custom-shaped installations.
